For me, the first thing I think about when it comes to deserts, is chocolate. The second thing I consider is, health. I want to be healthy in the way I live and in the foods I choose to eat. This means that the third thing I think about, is how to enjoy my chocolate while remaining healthy.
This though process and desire has led me to re-imagine many recipes. Such as this one. My gluten-free chocolate snicker-doodle cookie recipe not only tastes great, but it also allows me to be healthy.
Ingredients:
- ½ cup Butter (8 tablespoons)
- 1 ¼ cup Sugar
- ¼ teaspoon Baking Soda
- ¼ teaspoon Cream of Tartar
- 1 Egg
- 1 teaspoon Vanilla
- 1/3 cup Cocoa
- 1 cup Gluten-Free Flour
- ¼ Xanthum Gum
Cinnamon Sugar sprinkles:
- 2 tablespoon Sugar
- 1 teaspoon Cinnamon
Directions:
- Pre-heat oven to 375 degrees F.
- Soften butter in a large mixing bowl, then add sugar, baking soda, and cream of tartar.
- Mix in egg and vanilla.
- Mix in cocoa, flour, and xanthum gum.
- Drop cookies on greased cookie sheet about 2 inches apart. Flatten softly (I like to use a fork and make a crisscross pattern) and sprinkle the cinnamon sugar mix onto the cookies.
Years ago, we got a new salt&pepper shaker and so now I use my old one for my cinnamon sugar mix. In this way I can sprinkle my mix easily and since I use a cinnamon sugar mix for various recipes I don’t need to make a new batch each time.
- Cook for 9-11 minutes, cool on rack, and enjoy!
